Yakisoba is a flavorful stir-fried Japanese noodle dish filled with crisp and tender vegetables. Add mushrooms, shrimps, vegetables, pork, or chicken for a protein-packed finish to this one-pan meal. This recipe is my version of how to prepare it.

Ingredients
1 package yakisoba noodles
1/2 chop onion
3 cloves garlic
1 medium carrot julienne
1 cup mushrooms
¼ green cabbage
1 medium zucchini
¼ leek (or green onions)
1 tbsp wok sauce (soy sauce)
120 gr sliced chicken meat
80 gr shrimps (add if you want more)
5 tbsp Extra virgin Olive oil
Salt & pepper to taste
Directions
1: Start by preparing the vegetables. Slice the onions, carrots, mushrooms, cabbage, and green onions into long thin strips.
2: Stir-fry the mushroom first and set aside.
3: Next, stir-fry the shrimps with garlic
4: In the same pan, add a teaspoon of extra virgin olive oil, stirring onion until they become slightly translucent and add garlic, cooking for about two minutes.
5: Then add chicken, seasons with salt and pepper, cook it until brown and set aside.
6: In the same pan again, add a teaspoon of extra virgin olive oil, put carrot and zucchini, stir them and add with a pinch of salt and pepper. Cook until vegetables are tender, about three minutes.
7: Add the leek and cabbage, pour the wok sauce, stir smoothly, and add the salt to taste.
8: Then add chicken, mushrooms, and shrimps and stir them together delicately, cooking for a minute or two—until tender and set aside.
9: While cooking the vegetables in a pot, boil water to cook the noodles, and when it is cooked, drain it
10: Serve the noodles with your desired garnish.
